JC’s Steakhouse in Gilbert will hold its monthly wine tasting – which focuses on a different country each time – at 7 p.m. Wednesday.

This month’s focus will be on the United State – in particular, Oregon and Washington. The food and wine pairings:

  • Dungeness crab-stuffed wild mushrooms and oyster Rockefeller, paired with Charles Smith Velvet Devil Merlot.
  • Tangy pear salad and clam chowder paired with Underwood Pinot Gris.
  • Hazelnut-crusted salmon with a wine-and-cherry reduction, cheese and pink shrimp grits, and sautéed Washington apples, paired with Underwood Pinot Noir,
  • Blackberry upside-down pie with fresh strawberry ice cream, paired with Washington Backwater Riesling.
