Hand Cut Burgers & Chophouse, a new concept from the Riot Hospitality Group, opens at 5 p.m. today on the southeast corner of Marshall Way and Camelback in Scottsdale.

It’s located just south across Camelback from Scottsdale Fashion Square.

The restaurant is a fast-casual burger bar during the day and a full-service chophouse, with the addition of steaks, pork chops, and other quality meats, at night.

The focus of both identities is beef – in this case 100% grass-finished beef from a free-range Arizona ranch with no added hormones or antibiotics.

‘‘Our attention at Hand Cut focuses on the type of beef we are sourcing,’’ Riot CEO Ryan Hibbert says.

‘‘We believe clean eating is so important to everyone’s overall health that we built a burger and chophouse that only sources cattle with grass-finished diets.

‘‘We guarantee at Hand Cut that at all the meat we serve is raised responsibility, and will be non-processed, non-hormone, clean red meat that tastes amazing,’’ he says.

Hand Cut is the fourth concept in Old Town from Scottsdale-based Riot. Others are Dierks Bentley’s Whiskey Row, El Hefe, and Farm & Craft.

Riot also has a Whiskey Row in downtown Tempe, and plans to open a Whiskey Row and a Farm & Craft in downtown Gilbert by the end of this year.

Hours are 11 a.m.-10 p.m. Sunday-Thursday and 11 a.m.-midnight Friday-Saturday.
