Latest poutine-like concept Grubstak opens today in downtown Gilbert

Grubstak, the latest fast-casual poutine concept to arrive in the Valley, opens today at the Heritage Marketplace in downtown Gilbert.

Instead of featuring traditional French fries, Grubstak’s offerings – known as Staks – are built on a layer of waffle fries (regular or sweet potato), roasted root vegetables, or romaine spears.

The eponymous house speciality, The Grubstak, for example, is a 50-50 mix of waffle fries topped with Schreiner’s breakfast sausage, pork belly, cheddar cheese, gravy, and a fried egg (pictured).

The Chillax has black bean chili, braised beef rib, cheddar, and sour cream, while The Rancher come with roasted chicken, ranchero sauce, cheddar and cotija sheese, and sour cream.

You also can build your own custom Stak from a list of ingredients. Beverage options include beer and wine.

The Grubstak concept was conceived by owner Colton Grubb, the grandson of longtime Valley car dealer Lou Grubb.

Hours are 10:30 a.m.-9 p.m. Monday-Thursday, 10:30 a.m.-10 p.m. Friday-Saturday, and 10:30 a.m.-8 p.m. Sunday.

Other recent poutine concepts to hit the Valley include Tucson-based US Fries and Florida chain French Fry Heaven, both of which opened in Tempe in the fall of 2015.

US Fries closed in September.
