Tres – a new restaurant and bar specializing in the flavors of the American Southwest, Spain, and the Mediterranean – opens at 3 p.m. today in Discovery Office Park in south Tempe.

The office park is located on the west side of Price about a quarter mile south of Guadalupe in Tempe,

“We are combining traditional and familiar southwestern and Mexican flavors with the light, healthy and popular dishes found in the Mediterranean region,’’ executive chef Steven Zimmerman says.

Tres’ wood-fired oven produces three sizes of plates:

  • Small: Appetizers such as Arizona tepary bean hummus ($8), Moroccan spiced pork wings ($13), and Brussels sprouts carbonara ($8).
  • Medium: Entrees such as spicy lamb merguez sliders ($14), a Tres cheese torte ($16), and herbed chicken confit ($21).
  • Large: Group shares such as paella Valencia ($66), canoe bone beef osso buco ($59), and a double-boned pork tomahawk ($69).

There also are build-your-own meat and cheese boards ($17-$46).

From the bar

A pineapple hibiscus cooler ($10), spiced pear sour ($12), and blood orange basito ($10) are highlights among the craft cocktails.

There are 16 wines by the glass ($9-$13) or bottle, three kinds of margaritas ($10), three sangrias ($10), and build-your-own mules.

Also available: Flights of Arizona craft beers ($7), Southwest wines ($11), Del Maguey mezcal ($11), and sangria ($10).

33 days of specials

From Monday, Feb. 19, through March 23, Tres will celebrate its opening with three specials for 33 days:

  • Happy hour pricing all day throughout the restaurant (not just in bar area).
  • Buy a small or medium plate for lunch and get a free small or medium plate.
  • Buy a medium plate for dinner and get a free small plate.

Diners must mention specials when ordering, and reservations are required for lunch special.

Hours of operation

Today through Sunday, Tres will be open from 3-11 p.m. for happy hour and dinner.

Starting Monday, regular hours will be 11 a.m.-11 p.m. daily.
