Chef talk: Josh Hebert of Posh

The Arizona Business Gazette has a nice feature on Posh owner-chef Josh Hebert. Among the things we learn about Josh:

  • He graduated from Phoenix’s Brophy Prep.
  • His first job was for Mark Tarbell.
  • He makes turtle posole and turtle fritters.

As for opening his 18-month-old Scottsdale restaurant, which has become one of the most-acclaimed in the Valley, at the height of the recession, he says:

I had no delusions of grandeur. No one had money, and everyone who had it wasn’t spending it. I was nervous as hell in the beginning.
