Pancake cupcakes with maple cream frosting and topped with bacon?
That’s just one of the treats you’ll find at Top It Cupcakes, a gourmet cupcake shop that’s opened in Gilbert Town Square on Gilbert Road south of Warner.
The shop offers five every-day flavors, plus a bunch of daily specials like the pancake cupcake (pictured at right) on Fridays.
Other specials include French toast, peanut butter and jelly, cotton candy and malted milk cupcakes.
If you’re more of a do-it-yourself kind of person, Top It also sells plain cupcakes that you can customize at a toppings bar.
The woman behind the cupcakes is pastry chef Rachel Saunders, who trained at Le Cordon Bleu London and worked at Vincent’s on Camelback and La Dolce Vita.
