The Republic puts a “spotlight” on busy chef-restaurateur Johnny Chu with a somewhat encyclopedic feature that strangely doesn’t even quote Chu until the 27th paragraph:

Besides running Sens Asian Tapas & Sake Bar in Phoenix and Tien Wong Hot Pot in Chandler, Chu is opening Mint in Scottsdale this spring.
