Matt Carter’s menu at Monti’s

Monti’s La Casa Vieja continues its monthly Culinary Masters Series with guest chef Matt Carter (Zinc Bistro, The Mission) on Tuesday, April 24.

From 5 to 10 p.m., Carter’s menu will include:

Entrees

  • Crispy crab cakes, spicy aji ricotto slaw, smoked tomato and crispy corn
  • “Un”chopped salad, iceberg wedge, sherry vinaigrette, double smoked bacon, avocado, roasted campari tomato
  • Smoke salmon salad, shaved granny smith apple, spinach, arugula, horseradish crème fraiche dressing
  • Whole roast thyme smoke veal chop, double tarragon béarnaise
  • Cabernet braised short rib, bone marrow, parsley sea salt
  • Filet, Oaxacan pasilla glazed onions and bacon

Sides

  • Mac and cheese with smoked French ham
  • Creamed spinach and artichoke, roasted red peppers, crispy onions
  • Charred poblano grits

Desserts

  • Rum raisin bread pudding, butterscotch ice cream
  • Warm espresso chocolate gateau, caramelized banana, brandied cherries

May’s guest chef will be, appropriately enough, Aaron May.
