Monti’s La Casa Vieja continues its monthly Culinary Masters Series with guest chef Matt Carter (Zinc Bistro, The Mission) on Tuesday, April 24.
From 5 to 10 p.m., Carter’s menu will include:
Entrees
- Crispy crab cakes, spicy aji ricotto slaw, smoked tomato and crispy corn
- “Unâ€chopped salad, iceberg wedge, sherry vinaigrette, double smoked bacon, avocado, roasted campari tomato
- Smoke salmon salad, shaved granny smith apple, spinach, arugula, horseradish crème fraiche dressing
- Whole roast thyme smoke veal chop, double tarragon béarnaise
- Cabernet braised short rib, bone marrow, parsley sea salt
- Filet, Oaxacan pasilla glazed onions and bacon
Sides
- Mac and cheese with smoked French ham
- Creamed spinach and artichoke, roasted red peppers, crispy onions
- Charred poblano grits
Desserts
- Rum raisin bread pudding, butterscotch ice cream
- Warm espresso chocolate gateau, caramelized banana, brandied cherries
