Much-anticipated ShinBay opens with limited menu at Scottsdale Seville

Chef Shinji Kurita, who closed his acclaimed ShinBay in Ahwatukee five years ago, quietly has reopened his sushi restaurant at the Scottsdale Seville.

The new spot, which seats just 30 people, will feature a “New Tokyo-style” menu, meaning no sushi rolls. To start, ShinBay is offering a very limited menu 5 to 10 p.m. Wednesday through Sunday.

Kurita hopes to implement a larger menu, including multicourse omakase (chef’s choice) dinners, by fall.
