Aug. 29: Pinot Noir Battle at Cork

Cork, which took nearly a year’s hiatus from its popular wine dinners, is back with a doozy. On Monday, Aug. 29, the south Chandler fine-dining restaurant will offer Pinot Noir Battle, a six-course feast featuring nine wines.

Pat Jasmin from Valley of the Sun Fine Wines will be the featured guest.

Chef Brian Peterson’s menu (with the wine pairings):

  • Foie Gras Torchon/Foie Gras & Mushroom Terrine (Tapiz 2010 San Pablo, Argentina vs. Vicars Choice 2008 “Santa Clara Estate” Marlborough, New Zealand)
  • Lake Superior Smoked Trout/Smoked Trout Roe (Frogmore Creek 2007 “Estate” Tasmania vs. Matanzas Creek Winery 2007 “Bennett Valley” Sonoma Coast, California)
  • Anise Roasted Veal Loin/Pan Fried Sweet Breads (Schafer 2007 “Estate” Rheinhessen, Germany vs. Molnar Family 2008 “Poseidus Vineyard” Carneros, California)
  • Confit Poached Prime Beef Tenderloin/Sous Vide Beef Tongue (Chanson Pere & Fils 1er Cru 2007 Gevrey Chambertin, France vs. Elk Cove 2009 “La Boheme” Willamette Valley, Washington)
  • Strawberry Cheesecake (Adelsheim 2008 “Deglacé” Chehalem Mountain Pinot Noir “Ice Wine”)
