One of the drawbacks to living in a region that measures its winters in days, instead of months, is the all-too-short window for the season’s comfort foods.
I was reminded of this when I saw some of the new items on Cork‘s just-unveiled winter menu:
- Cioppino, a seafood stew of lobster, crab, clams, mussels, and shrimp in a spicy tomato broth.
- Pork tenderloin with Brussels sprouts, apples, bacon, honey-roasted peanuts, scallion hash brown, and cider gastrique (above right)
- Truffled risotto with crispy pancetta, braised leeks, baby shiitakes, and Roca parmesan.
- Roasted duck breast with duck confit, goat cheese risotto, grilled asparagus, and wild mushroom bisque (above left)
Pork and peanuts? Can’t wait to try that combo. See the full winter menu (pdf).
Cork, located on the northeast corner of Alma School and Chandler Heights in south Chandler, is open for dinner Tuesday through Sunday.
