As part of Arizona Beer Week, SanTan Brewing is doing a Chimichangas & Beer promotion, offering a special chimichanga, served with rice and beans, every day this week (prices TBA):
Monday:Â Sonoran Coney Chimi (bacon-wrapped Portuguese sausage with Coney Island chili, sliced avocado & pico de gallo, rolled up in a jumbo flour tortilla and fried). Recommended pairing:Â Epicenter Amber.
Tuesday: Tinga Chicken Chimi (spicy shredded chicken breast slow-cooked with dried chilis, tomatoes, onions & garlic, rolled up in a jumbo flour tortilla, fried and served enchilada-style with red chili sauce). Recommended pairing: SunSpot Gold.
Wednesday: Cochinita Pibil Chimi (pork pibil with pickled red onions, fresh cilantro & roasted plantains rolled up in a jumbo flour tortilla and fried). Recommended pairing: HefeWeizen Wheat.
Thursday: Chibo Goat Chimi (slow-smoked pulled goat with black beans and a chipotle cream cheese rolled up in a jumbo flour tortilla and fried). Recommended pairing: Devil’s Ale.
Friday:Â Texas Red Chili Chimi (chunks of braised beef simmered in a hearty tomato chili with chopped white onion and sharp aged white cheddar rolled up in a jumbo flour tortilla and fried). Recommended pairing:Â Gordo Stout.
Saturday: Green Chili Pork Stew Chimi (tender pork with Anahiem green chilis, potato, carrots & onion rolled up in a jumbo flour tortilla, fried and served enchilada-style with green chili sauce & melted pepper jack cheese), Recommended pairing: Devil’s Ale.
