Over Easy breakfast eatery adding locations in Mesa & Gilbert

Over Easy, the popular Arcadia breakfast eatery that already has opened a spinoff in Scottsdale, now is expanding into the Southeast Valley with a pair of locations.

One will be located on Warner, just east of Gilbert Road, in Gilbert. The other will be on Southern, just west of Power, in east Mesa.

Chef Aaron May’s Waffle Dogs (pictured), a variant of a corn dog using a sausage on a stick wrapped in a waffle, have been featured on the Food Network.

Other menu items include M&M pancakes, caramelized banana & pecan brioche French toast, and the eponymous Over Easy (toasted brioche with sautéed spinach, fried egg & natural jus with bacon & scallions).

Both locations are expected to open around the first of the year.
