Sleepy Dog Brewery to open pub & bistro in Gilbert, scout for new site for brewing operation

Sleepy Dog Brewery is the latest craft beer purveyor to set its sights on Gilbert. The Tempe brewery is opening a spinoff, Sleepy Dog Pub & Bistro, on Feb. 15.

The new venture, a partnership with the owners of D’Vine Bistro & Wine Bar, will take over the recently closed Warren’s Jazz Bistro space on the southwest corner of Williams Field (Chandler Boulevard) and Val Vista in Gilbert.

Sleepy Dog Brewery Tempe AZThe corner already is home to several restaurants, including Pita Jungle, Barro’s Pizza, and Filiberto’s. Across the street are Blue 32 Sports Grill, Harvey American Public House, Mind Over Batter, and others.

Unlike Sleepy Dog Brewery, which has no kitchen, Sleepy Dog Pub & Bistro will offer a full menu of food, as well as beer, wine and spirits, according to co-owner Matt Weber. There also will be live music and lots of events, he says.

No brewing will be done at the new location, Weber says. But once the pub is open, Sleepy Dog will begin working with Gilbert officials to find another building to move the brewery operation from Tempe.

Weber says he expects Sleepy Dog to continue using its Tempe location, which opened in December 2009, for another 18 months.

In other Gilbert beer news, the town’s first brewery, Arizona Wilderness Brewing, has gotten bogged down in the permit process and now is looking at a March launch.

And World of Beer, which made its Arizona debut last summer on Tempe’s Mill Avenue, plans to open another location at Santan Village in May.
