Chanterelle, crimini,  shiitake, portabella, morel, porcini – the list of edible mushrooms is quite lengthy. And Cork will celebrate their variety Sunday with Taste of Mushrooms, the Chandler restaurant’s monthly $35 four-course tasting menu.
Taste of Mushrooms menu
- 1st course: Maitake mushroom and smoked boar sausage soup with St. Andre brie croustade and velvet pioppino ragout
- 2nd course:Â Poached King Trumpet mushroom salad with prosciutto, grilled artichokes, wild watercress, sugar snap peas, and truffled herb vinaigrette
- 3rd course (choice of one):Â Porcini-dusted pork tenderloin with oyster mushrooms, English peas, parmesan couscous, and red wine mushroom sauce; braised baby shiitake and abalone mushrooms with ricotta gnudi, charred cherry tomatoes, kale, caramelized fennel, and spinach pesto; or pan-roasted branzini with garlic-scented morels, sweet corn succotash, grilled ramps, and wild mushroom agrodolce.
- 4th course: Truffle Tremor cheese with Meyer lemon and walnut conserve and lavender cracker
There’s an optional starter of duxelle arancini with mushroom goat cheese fondue for an additional $10. Â You also can add three wine pairings for $15.
