Someburros family to launch Mexican restaurant Isabel’s Amor in Gilbert

Isabel’s Amor, a new Mexican restaurant from the family behind the Valley’s Someburros chain, will open in October on the northwest corner of Val Vista and Williams Field in Gilbert.

The Forum at Gilbert Ranch development already is home to several eateries, including Blue 32 Sports Grill, Harvey’s American Public House, Mind Over Batter cupcake shop, and Geno’s Cheesesteaks & Deli.

The new restaurant is named for Isabel Vasquez, matriarch of the family that launched Poncho’s in south Phoenix in 1972 before developing its successful fast-casual concept Someburros, which recently opened its sixth location.

Isabel’s Amor is described as a “comfortable, welcoming and polished Mexican eatery” that will serve made-from-scratch dishes, make its flour tortillas in-house daily, and feature a craft cocktail list.
