It’s now a little easier for east Mesa residents to eat healthier. The Cutting Board Bakery & Cafe – which bills itself as “vegan, vegetarian, whole foods and healthy – has opened on Power, just south of Baseline.
The eatery is the brainchild of Sean and Krystal Macdonald, a young Mesa couple who run the healthy-eating website Fresh and Raw. One of the website’s mottos: “A happy, healthy life starts at the cutting board.”
The Cutting Board is open 7 a.m.-3 p.m. every day except Monday.
The signature breakfast item is sweet potato hash ($6) made with potatoes, carrots, kale, and herbs. The hash also is available in a breakfast burrito ($7) with black beans and roasted vegetables.
Santa Monica French toast ($5.50, pictured) features house-made bread soaked in orange juice and spices and topped with blueberries, almonds, and maple syrup.
A black bean burger with a side of organic blue corn chips and salsa ($7.50) is the highlight of the lunch offerings. A pair of soft tacos ($7) are filled with “nutty meat,” cilantro micro-greens, tomatoes, and salsa.
Sandwiches include organic peanut butter or maple almond butter with banana, sunflower seeds, and flax meal on sprouted Khorasan sandwich bread ($3.50).
The seasonal menu also serves up housemade soups, fresh baked goods, coffee drinks, smoothies, and juices.
