Enjoy traditional Swiss alpine dish at Wedge & Bottle’s annual Raclette Day on Saturday

Ahwatukee cheese shop Wedge & Bottle holds its annual Raclette Day from noon-3 p.m. Saturday.

Raclette is a Swiss dish made with melted cheese of the same name. The name derives from the French word “racler,” meaning “to scrape.”

The cheese round is heated – traditionally in front of a fire, but nowadays by a special machine – and the melted layer is scraped over a plate of goodies.

Wedge & Bottle’s version of the centuries-old dish will feature the cheese over potatoes, cornichon pickles, and Smoking Goose Pastrami. It will be $8.50 per serving.

A rep from Action Wine will be present to pour samples of Raclette-friendly wines.
