Fusion Burrito, a new independent restaurant offering burritos with globally inspired fillings, opens today on Gilbert Road just south of Guadalupe in Gilbert.
The 1,500-square-foot building, which has a dog-friendly patio and drive-through, most recently was home to Rienda’s Mexican Food, which closed last year. Before that it was Rivas Mexican Food.
The seven burritos on Fusion’s menu include the Boise (pictured) with roast chicken or pork, mashed potatoes, and gravy; the Seoul with roast pork, rice, shredded cabbage, and sunflower seeds; and the Parma with roast chicken or pork, risotto, and marinara.
Prices range from $5.99-$7.99.
The menu also has five salads ($6.39-$7.99), four quesadillas ($5.49-$7.99) and unusual sides like tater tots in buffalo sauce ($2.99), kettle chips with French onion dip ($1.98), and New Orleans-style beignets ($2.79).

Fusion Burrito is open 11 a.m.-9 p.m. Monday-Thursday and 11 a.m.-11 p.m. Friday-Saturday.
