Changes are in the works at three-month-old Dubina Brewing Company in Glendale.

Jared Dubina (pictured on right), who owns the brewery with his father, has hired Patrick Mccanna (left), whose resume includes stops at SanTan Brewing and Uncle Bear’s.

“We are making him our head brewer to allow me to focus on growing the business and getting our brand out there on the west side to grow the craft beer scene,” Dubina says.

Among Mccanna’s first tasks will be installation of a glycol system (the brewery currently uses a chill room for fermentation) and development of a Bohemian pilsener. The brewery specializes in Czech-style beers.

Dubina also announced he has reached an agreement to buy the seven-barrel brewing system being replaced at Arizona Wilderness. He expects to get the system up and running n Glendale in March.

“Our current three-barrel system only gives us six kegs (at a time), and that turns over fast at our 4,350-square-foot place,” he says.
