A few weeks ago I reported Eklectic Pie would make its debut on the northeast corner of Stapley and Baseline in Mesa in mid-September. It took a little longer than planned, but its doors open today.
The pizzeria, which focuses on fresh and locally sourced ingredients, offers 11 “Wall of Fame” pizzas:
- Margherita: Marinara sauce, Roma tomatoes, fresh mozzarella finished with fresh basil & Parmesan.
- Meaty Italiano: Marinara sauce, mozzarella, cheddar, pepperoni, Italian sausage, salami, meatball & black olives topped with Parmesan cheese.
- Sedona: Chipotle sauce, mozzarella, cheddar, grilled chicken, jalapeños, corn, black beans, red onion, sour cream & guacamole.
- Cowboy BBQ: BBQ sauce, mozzarella, cheddar, pulled pork, bacon crumbles & red onion, drizzled with more BBQ Sauce.
- Flame Thrower: Buffalo sauce, mozzarella, cheddar, gorgonzola crumbles, & grilled chicken drizzled with ranch dressing & more buffalo sauce.
- Besto Pesto Chicken: Basil pesto, mozzarella, feta cheese, grilled chicken, mushrooms & Roma tomatoes topped with shredded Parmesan cheese & fresh basil.
- Italian White Wedding: Alfredo sauce, mozzarella, Roma tomatoes, zucchini, mushrooms, caramelized onion, carrots, red peppers, & black olives, finished with shredded Parmesan & fresh basil.
- Sgt. Pepper’s: Spicy jalapeño cilantro lime cream sauce, mozzarella, bell peppers, red onion, & grilled chicken finished with shredded Parmesan, more JCLCS & fresh cilantro.
- Loaded Potato Skin: Marinara sauce, crispy potatoes, mozzarella, cheddar, & bacon crumbles, finished with sour cream & green onions.
- Chairman Chow: Chinese spicy chili sauce, grilled chicken, mozzarella, carrots, red peppers, red onion, Chinese snow peas, & toasted sesame seeds topped with fresh bean sprouts.
- Wine Country: Alfredo Sauce, mozzarella, gorgonzola, caramelized onion & walnuts topped with baby spinach leaves & balsamic fig vinaigrette.
You also can create your own pizza from Eklectic’s nine sauces, eight cheeses, and 42 toppings. Pizzas are $7.99 for 11-inch and $5.49 for 7-inch, regardless of number of toppings.
The menu also offers Italian Gondola sandwiches ($7.49 each) and salads ($7.29 each), as well as Arizona craft beer and wine.
Eklectic Pie is open 10:30 a.m.-10 p.m. Monday-Thursday, 10:30 a.m.-11 p.m. Friday-Saturday, and 10:30 a.m.-9 p.m. Sunday.
A second location is scheduled to open next to the Harkins theaters on the nothwest corner of Gilbert and Germann in Chandler in November.
