Mellow Mushroom, an Atlanta-based chain of pizzerias, is taking over the former On The Border Mexican Grill & Cantina site in front of the AMC Mesa Grand 24 theaters.
Located on the northeast corner of Stapley and Baseline, the location will be Mellow Mushroom’s fifth in Arizona, including ones in downtown Tempe and Ahwatukee.
On the Border closed a couple of years ago and the site is now a dirt lot. Mellow Mushroom is building a 7,200-square-foot restaurant with a 2,000-square-foot patio.
Mellow Mushroom was opened by a trio of college students in 1974 and now has more than 180 locations.
The hippie-themed concept offers 16 specialty pizzas with monikers such as Kosmic Karma (pictured), Magical Mystery Tour, and Philosophers Pie. The menu also has salads, sandwiches, and calzones.
Mellow Mushroom also is known for its huge selection of craft beer. Both of the current East Valley locations have 48 beers on tap.
Look for the Mesa location to open around March.
