Grubstak, a new concept featuring waffle fries with toppings, is coming to the new Heritage Marketplace in downtown Gilbert.
Diners start with a base of waffle fries (regular or sweet potato), roasted root vegetables, or romaine spears, then add layers (‘‘staks’’) of meats, sauces, and other toppings.
“We’ve taken comfort food to an exciting new level by introducing healthy and indulgent stak options,’’ owner Colton Grubb says. ‘‘We’re excited to bring a new flavor and experience to the community of Gilbert.’’
The 3,000-square-foot space will have shared indoor-outdoor tables, two large walls of floor-to-ceiling windows, and a patio.
Grubstak will have a liquor license and sell wine and local craft beer.
A fall opening is planned.
