Square One Concepts, best-known for its Cold Beer & Cheeseburgers restaurants, debuts its newest concept, Bourbon & Bones Chophouse & Bar, today in Old Town Scottsdale.
Bourbon & Bones takes over the former Alphagraphics on the northwest corner of Scottsdale Road and Third Avenue.
The 4,000-square-foot modern-industrial venue is Square One’s third restaurant on the block, along with Crab & Mermaid, another new concept that debuted in March, and a CBCB.
The interior of Bourbon & Bones features reclaimed wood, distressed leather booths, and walnut tables.
The menu offers classic American fare focusing on wet-aged and dry-aged cuts of beef, 75-plus bourbons, a 750-bottle wine case, and handcrafted cocktails..
Chef Isaac Carter, who helped launch Crab & Mermaid, will oversee both restaurants.
Hours are 3 p.m.-1 a.m. daily, with happy hour from 3-6 p.m. weekdays. On Fridays, there’s a “Power Lunch†from 11 a.m.-3 p.m.
