Salad and Go, a Gilbert-based chain of drive-through salad eateries, opens its seventh location at 10:30 today on the northeast corner of Alma School and Southern in Mesa.
Like previous locations, it will focus on lunch and dinner to start, then roll out breakfast in a couple weeks.
Salad and Go is the brainchild of Roushaun Cristofellis. She and her husband launched the concept in 2013 as a healthy alternative to the fast-food drive-throughs in their Gilbert neighborhood.
The restaurants feature a drive-through, a walk-up window, and a few patio tables. There are no inside dining areas.
The menu offers 10 gourmet salads (or wraps) created by Bourbon Steak chef Daniel Patino. The breakfast menu has egg-white burritos, quinoa bowls, and power wraps.

Two more East Valley locations are scheduled to open in early 2017 – at Power and Broadway in east Mesa and Kyrene and Chandler Boulevard in west Chandler.
