Left Coast Burrito Co. is the latest Valley food truck making the transition to bricks-and-mortar. The truck is opening a tiny vintage diner – just 11 seats, although there are plans for a large front patio – called Handlebar Diner near Ellsworth and Ray in southeast Mesa. It will serve breakfast, lunch, and dinner. Look for an April 1 opening.
