Chad Bolar, the new chef at Meridiem all-day restaurant in Chandler, is rolling out a new menu this week.
Bolar’s resume includes lengthy stints at Christopher’s, Wrigley Mansion, and, most recently, Pesto’s.
Some of the new sandwiches on his Meridiem menu:
- Grass-fed bison burger with bacon shallot jam and red bell pepper ketchup ($16)
- Cuban sandwich with slow-roasted pork, speck, Swiss, and housemade relish ($14)
- Shrimp po’ boy with crispy fried shrimp and spicy tobacco remoulade ($14)
- Duck croque madame with shredded duck confit, red onion jam, and fried egg ($16)
Among the new salads:
- Strawberry spinach salad with blue cheese and green apple ($12)
- Roasted beet salad with Arizona citrus and goat cheese ($12)
- Smoked salmon nicoise salad with green beans and artichoke pesto ($15)
New entrees include:
- Herb-roasted chicken with root vegetable hash ($22)
- Cider-brined bone-in pork chop with au gratin potatoes ($28)
- Smoked 8-ounce filet with onion rings and whipped mashed potatoes ($34)
- Pasta du jour ($20)
Consider this week a soft rollout of the new menu. Recipes and plating are still being tinkered with.
