One of Gilbert’s most-anticipated new restaurants of 2018 – Four Silos Craft Coffee & Beer House – opens today on the southeast corner of Higley and Elliot.

The space in the Bashas’ plaza formerly was home to Yo Waffle. It seats 45 inside and another 28 on a wrap-around patio.

The breakfast menu features build-your-own breakfast sandwiches ($3.75), bagels and toast ($2.75-$3), yogurt parfaits ($5.25), oatmeal ($4.25), and cinnamon rolls and other baked goods from Rise Up Bakery.

For lunch and dinner, small bites include avocado toast ($5), hummus bowls ($6.50), pretzel plates ($7.50), and bruschetta ($14). There also are six panini sandwiches ($7.25-$9.25) and three 14-inch cauliflower-crust pizzas ($12-$14).

The menu eventually will be expanded.

In addition to a full range of coffee drinks, beverage options include teas, energy drinks, Italian sodas, and frozen drinks. There are 12 standard beer taps and two nitro taps.

Despite referring to itself as a brewery (including in its logo), Four Silos doesn’t actually brew any beers. Instead, several Four Silos brands are brewed under contract by SunUp Brewing in Phoenix:

  • Gilbert Gold IPL
  • Sun SIPA session IPA
  • Duck Duck Deuce double IPA
  • Wood Shed Wallop brown ale
  • Pkwy Pils
  • Oktoberfest
  • Hefeweizen

A pumpkin ale is expected to join the list by this weekend. The other taps feature guest beers or ciders. All available to go in growlers or crowlers.

Happy hour is 3-6 p.m. Monday-Thursday and all day Sunday with $1 off Four Silos beers, $1 off house wines, and food discounts.

Four Silos is open 6:30 a.m.-10 p.m. Monday-Thursday, 6:30 a.m.-11 p.m. Friday-Saturday, and 8 a.m.-8 p.m. Sunday.
