Chris Bianco, one of Arizona’s best-known chefs and restaurateurs, finally has opened a restaurant in the East Valley.

The Pizzeria Bianco founder and Tacos Chiwas owners Armando Hernandez and Nadia Holguin have taken over the two eateries at the Graduate Hotel near Mill and Apache.

The three first partnered on Roland’s Cafe Market Bar, which opened earlier this year in Phoenix.

Now they’re reworking the options at the Tempe boutique hotel, which opened in 2014 with Normal Diner, an all-day diner, and Tapacubo, a casual eatery that offered Mexican street food.

Both restaurants closed this summer.

Normal Diner just reopened as The Normal, the threesome’s take on a classic American diner.

Tapacubo will reopen as The Normal Bar, serving Chihuahua-style tacos and quesadillas, around the end of the month.
