Genbu Waffles & Drinks, an eatery specializing in Hong Kong-style egg waffles, has opened in the former Mr. Boba spot on the southwest corner of Longmore and Southern (map) in west Mesa.
Egg waffles, sometimes called bubble waffles, are a popular street food in Hong Kong and Macao made with a leavened batter cooked between two curved plates.
Although the waffles often are eaten plain, Genbu offers three exotic flavor creations:
- Black Tortoise: Black sesame shell with cookies-and-cream ice cream, housemade mochi, and black sesame, and topped with gold flakes and condensed milk drizzle ($8).
- Green Serpent: Matcha shell with vanilla bean ice cream and fresh strawberries, and topped with Oreo cookies and matcha condense milk drizzle ($7).
- White Tiger (pictured): Original egg shell with vanilla bean ice cream, toasted marshmallow and Reese’s Pieces candy, and topped with chopped peanuts and chocolate drizzle ($7).
Available drinks include Hong Kong milk tea ($5) and strawberry-lychee bubbler ($5).
Genbu is open noon-9 p.m. Sunday-Thursday and noon-10 p.m. Friday-Saturday.
