Fast-casual concept Thirsty Amigos Taco Shop opens at Gilbert Town Square

Thirsty Amigos Taco Shop, a new fast-casual Mexican restaurant, has opened at Gilbert Town Square on Gilbert Road between Warner and Ray (map) in Gilbert.

It takes over the seemingly jinxed building that most recently was home to Steak & Stone, which closed last October.

Other recent residents included American Taphouse, BoomBozz Pizza, and Boston’s Gourmet Pizza.

Fast-casual means you order at a counter from a Chipotle-like menu of burritos, burrito bowls, tacos, quesadillas, and nachos. A server brings the food to your table.

Fillings are categorized as standard (sweet pork, shredded chicken, ground beef), premium (shredded brisket, chicken tenders, crispy fish, grilled fish), and super premium (shrimp, fajita steak, fajita chicken).

A salsa bar offers a dozen varieties.

Tacos start at $3.49 (add 50 cents for premium filling, $1 for super premium) and pretty much all other entrees start at $7.99 (add $1 or $2, respectively).

The bar (pictured) is separate from the dining room, so you must stand in a different line to order a beer (12 on tap, plus bottles), margarita (nine on the rocks, plus 11 ‘‘beer-ritas’’), or specialty cocktail (eight).

Thirsty Amigos is open 11 a.m.-10 p.m. Monday, 11 a.m.-11 p.m. Tuesday-Thursday, 11 a.m.-midnight Friday, 10:30 a.m.-midnight Saturday, and 10:30 a.m.-10 p.m. Sunday.
