Peacock Wine Bar coming to north Gilbert this summer

Finally, there’s a new Gilbert restaurant and bar that’s not opening either downtown or at SanTan Village.

The Peacock Wine Bar is under construction on the southeast corner of Gilbert and Baseline, where it’s taking over a former fidget spinner store next to the Desert Financial Credit Union.

‘‘Our vision for the Peacock Wine Bar will be a more traditional wine bar concept,’’ co-owner Tracy Schoenley says. ‘‘Our focus will be primarily on the wine, with small plated foods and beer added in.’’

The Gilbert resident and first-time restaurant and bar owner says the Peacock will offer at least 50 wines, most available by the glass and all available by the bottle to enjoy at the bar or take home.

‘‘We will have food, but not extensive – small plated items such as charcuterie boards, paninis, bruschetta, olives, dips, bread, etc.,’’ she says. ‘‘We will also offer artisan chocolates and possibly a few other desserts.’’

Craft beer will be sold in bottles and cans.

‘‘We want to create a relaxing, comfortable, friendly, and welcoming environment,’’ Schonely says. ‘‘Kind of like ‘Cheers,’ but for a wine bar.’’

Look for the Peacock Wine Bar to open in late July or early August.
