SunUp Brewing in Phoenix releases Just Peachy, its first-ever sour ale, today. It also goes on tap at Craft 64 in Chandler and Scottsdale.
The kettle sour is a collaboration between SunUp brewmaster Uwe Boer and Craft 64 co-owner James Swann. The pizzeria features eight or more in-house beers, all brewed at SunUp, on its 30 all-Arizona taps.
In kettle souring, also called quick souring, beers are soured in the stainless steel mash tun (kettle) and a stainless steel fermenting tank, unlike traditional sours that are soured in wood casks.
Beer styles like goses and Berliner weisses are kettle sours, which typically are tart and tangy.
