East Valley barbecue restaurateur opens Clay Dawgs in Gilbert

Clay Dawgs, an eatery specializing in mesquite-fired hot dogs, holds its grand opening at 11 a.m. today on Gilbert Road just north of downtown Gilbert.

It takes over a stand-alone building on the northwest corner of Gilbert and Juniper that formerly was home to Francisco’s Mexican Food, which closed last year.

Clay Dawgs’ namesake is owner Clay Caldwell, who also founded Waldo’s BBQ (in 1993 and sold to a partner in 2014) and Caldwell County BBQ (in 2018), both in Mesa.

Clay Dawgs offers a simple menu of beef hot dogs or Polish sausages for $4 with a variety of condiments available.

There are four specialty dogs – the Chili Dawg, Slaw Dawg, Brisket Dawg (pictured), and Mac ’n’ Cheese Dawg – for $5.
