Fast-casual concept Bibio Modern Korean Kitchen opens in southeast Gilbert

Bibio Modern Korean Kitchen, a fast-casual Korean restaurant, has opened on southwest corner of Power and the Loop 202 in southeast Gilbert.

It takes over the strip-mall space formerly home to Pita Pit.

Bibio’s menu features build-your-own bowls in which you choose:

  • Base: White rice, brown rice, or salad greens;
  • Vegetables: Sesame kale and edamame, pickled carrot and radish, red cabbage, sautéed onions and peppers, corn, soy pickled onions and jalapeños, kimchi, spicy cucumber salad, or japchae;
  • Protein: Chicken bulgogi, beef ribeye bulgogi, spicy pork, spicy chicken, or sesame tofu;
  • Sauce: Korean spicy chili, Korean BBQ, creamy Sriracha, creamy cilantro-lime, citrus soy, or ginger carrot;
  • Toppings: Sesame seeds, sesame oil, roasted seaweed, or cheddar and jack cheese.

Prices range from $8.95-$95, depending on protein. Kids bowls are $6.95.

Additional menu items, such as fries and chicken wings, will be added soon.

Bibio is open 11 a.m.-2 p.m. and 5-8 p.m. daily.
