Koi Poke founder Sarah Bowers has sold six of the concept’s seven Valley locations to a private equity group headed up by former Arizona Diamondbacks pitcher Todd Stottlemyre.
The group intends to franchise the build-your-own-custom-poke-bowl concept nationally under a slightly new name, Koibito Poke, in 2020.
The Stottlemyre group purchased locations in Chandler, Arcadia, and two in Scottsdale, as well as soon-to-open locations in Peoria and north Phoenix.
Bowers and her original investors retain ownership of the flagship Koi Poke Bar and Bowl at DC Ranch Crossing in north Scottsdale.
