All-plant-based Mexican restaurant GuacStar coming to Tempe

GuacStar Kitchen & Cantina, an all-plant-based Mexican restaurant and bar, is coming to the Cornerstone plaza on the northeast corner of Rural and University in Tempe.

It’s taking over the second-floor next to the Improv that formerly was home to Copper Blues Rock Pub & Kitchen and, more recently, Sammy D’s All-American Saloon.

None of GuacStar’s dishes will use animal products, according to chef Vincent Contreras, who’s partnering with longtime Valley restaurateur Jimmy Carlin.

An opening is planned for March.
