GuacStar Kitchen & Cantina, a plant-based Mexican restaurant whose March opening was delayed by the covid-19 pandemic, finally opens at 5 p.m. today.
The 4,650-square-foot restaurant is located on the second floor of the Cornerstone plaza on the northeast corner of Rural and University in Tempe.
It took over the space that formerly was home to Copper Blues Rock Pub & Kitchen and, more recently, Sammy D’s All-American Saloon.
The menu offers plamt-based versions familiar Mexican dishes. Street tacos, for example, include ‘‘chicken elote’’ (made with seitan), ‘‘pork al pastor’’ (jackfruit), and ‘‘steak barbacoa’’ (charred oyster mushrooms).
Hours are 5-10 p.m. Sunday-Thursday and 5 p.m.-midnight Friday-Saturday.
