Sotol Modern Cocktail Kitchen, Gilbert’s first rooftop bar and restaurant, holds its grand opening at 4 p.m. today.
The space: It’s is located on the top floor of the three-story downtown building between Dierks Bentley’s Whiskey Row and Bergies Coffee Roast House.
The backstory: Originally named Ile.gal Modern Cocktail Kitchen, the venue had expected to open a year ago but was beset by a series of delays.
The menu: Food and drinks both pay homage to the Sonoran Desert, including pepita hummus, nopales fritas, and agave spirits.
Hours: Doors open at 4 p.m. Tuesday through Sunday.
