Cafe Rio Mexican Grill, a Utah-based chain of fast-casual Mexican eateries, has opened its third Gilbert location near the southeast corner of Ray and Power.
Due to the covid-19 pandemic, it offers lunch and dinner only via carryout, curbside pickup, or drive-through until 10 p.m. daily.
It’s the 19th Cafe Rio built by Valley-based Laurshan Construction in the past seven years. The 20th currently is under construction at Higley and Baseline in Gilbert.
