Grubstak shuts down last location in south Chandler after 2+ years

Grubstak, an unusual concept that offered a variety of poutine-like dishes, closed Sunday after two and a half years on the southeast corner of Gilbert and Ocotillo in south Chandler.

The eatery was the brainchild of Colton Grubb, the grandson of longtime Valley car dealer Lou Grubb. It was profiled on the Food Network’s popular ‘‘Diners Drive-ins and Dives’’ in 2018.

The menu featured creations called ‘‘staks’’ with a base of waffle fries, vegetables, or lettuce topped with various meats, cheeses, produce, and sauces.

The original Grubstak opened in downtown Gilbert in 2016 and also lasted just more than two years.
