Frenchie Pizza, a new fast-casual concept featuring thin-crust American pizzas as well as European flatbreads called flammekueche, is opening in south Gilbert next month.
It will be the fourth member of the Buschtetz Family Restaurant Group, which includes Cuisine & Wine Bistro in south Chandler and B Gastrobar and Copper & Logs in Gilbert.
Frenchie Pizza will take over the former My Pie Pizza in the Crossroads Towne Center on the southeast corner of Gilbert and the 202.
Although the restaurant will be geared toward takeout, there will be a 30-seat dining area. Six beers on tap, single-serve bottles of wine, and a margarita machine will be available for dine-in guests.
The restaurant’s name is a reference to owners Fabrice and Máiréad Buschtetz (pictured), who moved to the Valley from France in 2013, and also the flammekueche, a specialty of the Alsace region of France.
Traditional ‘‘flammes,’’ as they are called, have a tangy white sauce, smoked bacon, and onions, but Frenchie Pizza also will offer versions with additional toppings, as well as dessert flammes.
Fabrice Buschtetz will serve as executive chef of Frenchie Pizza. Mike Maitrel-Burgard, chef de cuisine at Copper & Logs, will oversee the kitchen.
“We’ve always used Fabrice’s past experiences in kitchens to develop concepts,” says Máiréad Buschtetz, general manager for the restaurant group. “We have so many ideas in our head we could probably do 20 more different themes easily.”
Frenchie Pizza is targeting a July 8 opening.
