Cafe Rio Mexican Grill, a Utah-based chain of fast-casual Mexican restaurants, has opened its fourth Gilbert location next to Farmer Boys near the southeast corner of Higley and Baseline.
It’s Cafe Rio’s 11th location in the East Valley, but only the second with a drive-through (joining the location at Power and Ray).
The restaurant is the 20th Cafe Rio built by Valley-based Laurshan Construction in the past seven years.
