Washington-based Trapper’s Sushi Co. will open its second Arizona location in the former Squid Ink sushi bar space at CityScape in downtown Phoenix.
The food: Asian fusion sushi rolls, nigiri, and all-you-can-eat sushi.
The chain: Sushi chef Trapper O’Keeffe opened his first restaurant in Bonney Lake, Wash., in 2004. Currently there are 11 Trapper’s Sushi locations in Washington and the one that opened in March in Avondale.
Tentative opening: October.
