Cafe Rio Mexican Grill, a Utah-based chain of fast-casual Mexican restaurants, has opened the first Arizona location of its ‘‘digital cafe’’ concept on the northwest corner of Indian School and 195th Avenue in the Verrado neighborhood of Buckeye. The store offers curb-side delivery, in-store pickup, a drive-through, and two digital kiosks. It’s the 36th Cafe Rio project by Valley-based Laurshan Construction.
