Cafe Rio Mexican Grill, the Utah-based chain of fast-casual Mexican restaurants, will open its next location June 10 near the southwest corner of Hunt Highway and Golf Club Drive in San Tan Valley. Cafe Rio’s menu offers salads, tostadas, burritos, enchiladas, tacos, quesadillas, and soups. It’ll be the 37th Cafe Rio project by Valley-based Laurshan Construction.
