Humble Bistro, a neighborhood wine parlor concept that’s a spinoff of Humble Pie, opens today in the former Waldo’s BBQ & Catering space on the northwest corner of Val Vista and Williams Field. The concept, which offers globally inspired cuisine and a décor meant to resemble a European cafe, made its debut last year at High Street in northeast Phoenix. New to the Gilbert location will be a marketplace expected to open this fall. Humble Bistro is open for lunch and dinner daily.
