Six Byrd Cider Co., which launched in Tempe in 2019 as Crush Craft Cider, finally opens its covid-delayed taproom today on the southeast corner of Indian School and 36th Street in Phoenix. The cidery, which makes 60 different varieties of cider, had to change its name due to trademark issues. (The new name refers to the three owners ‘‘flipping the bird’’ with both hands at the cease-and-desist letter they received.) The taproom also will serve food, such as bruschetta, charcuterie, and paninis.
