James Beard Award-winning chef Chris Bianco is rolling back hours at his four Valley restaurants due to staffing shortages, he announced Tuesday on Instagram.

The new hours:

  • Pizzeria Bianco (Heritage Square): 11 a.m.-9 p.m. Tuesday-Saturday. Closed Sunday and Monday.
  • Pizzeria Bianco (Town and Country): 11 a.m.-9 p.m. Thursday-Monday. Closed Tuesday and Wednesday.
  • Tratto: 5-9 p.m. Monday-Saturday. Closed Sunday.
  • Pane Bianco: 11 a.m.-3 p.m. Monday-Saturday. Closed Sunday.

The quote: β€˜β€˜It breaks my heart to cut hours, but overworking the good people we have is not a long-term solution.’’
