🍪 Eclipse Cookies & Coffee Bar, a bricks-and-mortar spinoff of the Droosserts Cookies & More food truck, has opened – with overnight hours! – near the southeast corner of Country Club and McKellips in Mesa.
What’s on the menu?
Eclipse focuses solely on the sweet side of Droosserts’ menu, particularly skillet cookies ($6 apiece), shakes, and coffee drinks. Popular cookie flavors include (clockwise from top left) chocolate chip, birthday cake, cookies and creme, and snickerdoodle.
The owners plan to open a second bricks-and-mortar concept that will focus on the savory side of Droosserts’ menu, such as burgers, chicken tenders, and loaded fries.
The Droosserts food truck, currently sidelined, will continue to offer both savory and sweet items when it resumes.
When is Eclipse open?
Eclipse opens at 4 p.m. daily and doesn’t close until 10 a.m. the following morning.
Co-owner Daniel Pace says the busiest time usually is 10 p.m.-4 a.m. Then there’s often a short lull between the late-night crowd and the morning coffee crowd.
